There is a lot of very good literature about FrameMaker. As a general entry to the program we can highly recommend Adobe’s own book series “Classroom in Book”, which comes with a lot of exercises and an associated CD.
Unfortunately, Adobe seems to have stopped the book series at version 11. Adobe has a good tradition of making real manuals, and FrameMakers is no exception. These are good – large – manuals that are worth spending time on.
FrameMaker hasn't changed much since version 5 when it comes to the most basic facilities such as variables, structure and text handling, so it’s quite unproblematic to buy literature that covers previous versions too. The biggest changes have actually been in the user surface and extended capabiliities of XML.
